I had to post this, because I just had a bowl of leftovers from last night, and it is SO GOOD. Please keep in mind that this chili is REALLY SPICY and if you don't like spicy food, replace the sausage with non spicy sausage, the jalapeno and serrano with bell peppers, cut out the red pepper flakes and cut down on the cayenne. It is a good idea to taste as you are making it, because when I say I like spicy, I LIKE SPICY. I can out spice everyone I know and the ONLY person who can eat my chili is my husband. So I actually highly recommend altering it and not copying the spice levels exactly. But hey, if you want to kick up your metabolism and can handle it, this is the way to do it. (I usually regret this the next day though.)
2 lbs lean ground beef 4 spicy smoked sausages, chopped small (I like lousiana sausages and keilbasa) 1 tbls olive oil 2 cups beef broth 1 fresh jalapeno, diced 1 fresh serrano, diced 1 tbls cayenne 3 cloves crushed garlic 1 tsp crushed red pepper flakes 1 tbls paprika 1 tsp salt
Optional: shredded cheddar sour cream chopped green or white onions
1. Heat olive oil in a large pot, add crushed garlic 2. Add ground beef, cook until barely browned, constantly stirring 3. Add ALL of the rest of the ingredients, stir, and heat on low for at least 1/2 hour 4. Top with garnish of choice
